Quinoa and Mushrooms
Ingredients:
- 1/4 cup dry quinoa
- 2 teaspoons olive oil
- 8 ounces sliced mushrooms
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh basil
- 1 tablespoon lime juice
- 4 ounces green chili peppers
- 8 1/2 ounces frozen artichoke hearts, thawed
Preparation:
- Cook quinoa according to package directions.
- Heat olive oil in a pan over medium heat. Add mushrooms, salt, and pepper. Cook until mushrooms are tender.
- Combine the remaining ingredients in a large bowl. Stir in mushrooms and quinoa.
